Who We Are
Chris and Trista Couser moved from Vail, Colorado to Fredericksburg in January 2005, and shortly after opened Eileen's Bakery and Cafe. Since then they have not had a chance to look back. Quality, consistency, and a courteous staff are key ingredients in making Eileen's an effortless place to relax. At dawn, surround your senses with the smell of freshly baked bread, delicate pastries and scones made with cream. In the winter sit by one of our fireplaces, warm your toes and savor your coffee.
The building in which Eileen's resides, was built over 200 years ago. It carries a charm that is noticeable from the second you walk through the door; original wooden floors, tall Colonial ceilings and weathered glass panes, ornate fireplace mantles and o'course the ghosts that reside there. The Chimneys Building, in itself, brings with it a wealth of history.
Pastries are available all day, however 11:00 a.m. brings us to the second half of the day. "Our Job is to tempt you!" Lunch lends itself to an array fresh roasted meats, house signature sauces and fresh sliced bread. Eileen's offers two styles of sandwiches; The " Build Your Own" sandwich, customized to your personal taste or our Gourmet sandwiches, made daily. Our staff takes pride in the " art of study" when it comes to these sandwiches; creative, flavorful, unique and most of all, well thought out.
An array of seasonal salads will encourage you to mix and match; from Cucumber-Pasta Salad with a Garlic-Whole Grain Mustard Vinaigrette to an Herbed-New Potato Salad tossed with Tarragon Vinaigrette, Toasted Almond-Wild Rice Salad to Green-Apple Coleslaw. Our options seem endless and our learning is limitless. The delight of making food well is always inspiring and for the customer, "a tantalizing treat for your gastronomic enjoyment"
